Apparently, Ham, hot dogs, etc, are not naturally pink. The nitrates they inject into the meat turns them pink, but may be carcinogenic (and cause colon and rectal cancer) but they still inject these products, because they fear they wouldn’t sell if they were a natural color, and looked more like pork roast (brown and light brown)

I remember seeing this information a few years ago.
Then a doctor pointed out that celery also contains the nitrates that are considered bad in many processed meats.
Apparently Nitrosamines are the actual problem and they form when nitrates are exposed to heat or acid.
Vitamin C can mitigate the effects of the Nitrosamine, while eating the meat in moderation and not over heating it also helps.
